Fun Recipe Ideas

There are many opportunities during the summer to hang out with friends and throw BBQs, slumber parties, or movie nights. However, you don’t always want to have the same food at each event. Here are few yummy recipe ideas for your next get-together that are quick and easy!

5-Layered Bean Dip: Take 1 can of refried beans and mash them down into an even layer at the bottom of a 8×8 square-dish. Then put an even layer of each: guacamole (optional), sour cream, salsa, and cheese. Smooth out each layer as thick as you would like and top off with sliced olives (a small can should do). Grab a bag of tortilla chips and enjoy!

Muddy-Buddies (also known as Puppy Chow): Take 9 cups of Chex cereal (whichever flavor you like best) and set aside in a large bowl. In a small bowl, microwave for 1 minute: 1 c. semi-sweet chocolate chips, 1/2 c. peanut butter, and 1/4 c. of butter or margarine.  Stir. Microwave again for 30 seconds and in subsequent intervals until mixture is smooth. Stir in 1 teaspoon of vanilla. Pour over cereal and mix until it is evenly coated. Pour chocolate covered cereal into 2 resealable gallon bags. Add 1 1/2 c. of powdered sugar (distributing sugar evenly between both bags), seal, and shake to get powdered sugar mixed in evenly among cereal. Refrigerate and eat later, or enjoy right away!

Taco Soup:  Start with about 1/2 big bottle of V8 juice in a big boiling pot or a crock-pot. Take 1 small can of tomato paste and put it in 1 c. water; mix then pour into V8 juice. Drain, then add 1 can of regular corn and 1 can of pinto beans (try to get flavored beans because you won’t have to add any seasonings). Add 1 full can of kidney beans without draining. Brown 1 lb. of ground beef (or try ground turkey for a healthy and flavorful alternative), drain grease, and add a packet of taco seasoning with suggested amount of water (found on packet). Add to V8 mixture and stir everything together. For added flavor try to put different types of seasonings in it (garlic powder, pepper, onion powder, chili powder, cumin)! Let it sit and heat up for about 20 minutes if it is on the stove, but if it is a crock-pot put temperature setting on low or high based on how soon you want to eat (low=more time, high=less time). Top off your bowl with a dab of sour cream and cheese!
