Pumpkin Cinnamon Roll Pancakes

Pumpkin Cinnamon Roll Pancakes - tender pumpkin pancakes with a buttery, cinnamon swirl!

This recipe is super simple, and super delicious!!!

Pumpkin Cinnamon Roll Pancakes

What you need:

  • 2 cups of all-purpose flour
  • 3 tablespoons of firmly packed dark brown sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • ½ teaspoon of salt
  • 1½ cups milk
  • 1 cup of canned 100% pure pumpkin
  • 1 egg
  • 2 tablespoons butter (melted and cooled)
  • 2 tablespoons of apple cider vinegar
  • For cinnamon filling:
  • 1 stick butter, softened
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon

How to make:

1) Prepare cinnamon filling by stirring together softened butter, brown sugar, and cinnamon. Set aside.

2) In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt and whisk together.

3) In a medium bowl, combine remaining ingredients and mix well.

4) Combine wet ingredients into the large bowl and stir.

5) Pour onto hot griddle or cooking surface.

6) After about a minute, add a cinnamon swirl using the filling you made earlier.

7) When the edges start to look done (about 8 minutes), use a spatula to flip them, and let them cook for about 5 more minutes.

8) Now its time to enjoy your delicious fall treat!!!
